After hurricane Irma and Maria in 2017, my family and I were eating a lot of papaya and I would throw the seeds over our porch. A few months later many papaya trees started growing and producing a lot of of large papayas. I thought, maybe I could make something tasty from all these papayas.

I decided on papaya pepper jam. It came out delicious and since I had so much of it, I gave it away to friends and co-workers. It was a hit! Then, my husband who is from Trinidad and loves spicy food, said why don't you try making a papaya hot sauce? So I gave it a try. My first batch got raving reviews from friends and co-workers and they told me that I should start selling the hot sauce. 

So, I started Spicy Sam's Hot Sauce, Jam & Hot Honey. All small batch products, locally made in St. Thomas, USVI, since  2019.  Since then I have created many different flavors besides the papaya that started it all.

Spicy Sam's is truly a family affair. My husband grows  and tends the fruits and peppers we use in our yard, my daughter designed the  business cards and product labels and my son does the heavy lifting with our deliveries.
